Most places offer fully trimmed tenderloin/filet mignon/chateaubriand for $270+ per pound. We are opting for a partial trim to keep the prices $105 per pound cheaper than the fully trimmed option to make an easier barrier to entry for this amazing piece of wagyu.
Poroshiri Wagyu gets its name from Mount Poroshiri, a natural setting where it's bred. This mountain, translating to "Great Mountain" in Ainu, is nestled in Hokkaido Prefecture, renowned for its rare flora, vibrant summers, and snow-covered winters, often dubbed God’s Paradise.
The rearing environment for Poroshiri Wagyu is truly unique. The farm utilizes ancient stones called Bakuhanseki valued for their medicinal and cleansing attributes, purifying both air and water. These cattle exclusively graze on grass grown on the farm's own fields and drink water filtered through Bakuhanseki stones.
